Roasting & baking
Targeted heat control for the desired degree of browning, characteristic roasted flavours and controlled cooking.
Showering
Controlled showering after cooking lowers the product temperature and initiates cooling in a targeted manner.
Chilling & crust freezing
Rapid, gentle chilling with air and water reduces weight loss and saves cooling space. Products can then be packaged without intermediate storage or selectively crust-frozen for slicing.
Pasteurisation & pressure cooking
Short processes under counterpressure kill microorganisms on the product surface, treat the product and packaging gently, and extend shelf life.
Ripening & fermentation
The product determines the ripening process – air movement, humidity and temperature are adjusted to its stage of ripening.
Drying & climate control
Controlled moisture removal through coordinated airflow and climate control – for reproducible drying results.
