PROCESS CONTROL

A clear sequence. Controlled to the core.

01

Drying

Product-specific drying control.

02

Smoking

Develop the desired smoke character.

03

Cooking

Control temperature and humidity.

04

Control core temperature

Until the desired process result is reached.

YOUR BENEFITS

Colour. Flavour. Uniformity.

01

One fan per trolley position

Each trolley position has its own fan motor with a stainless steel impeller manufactured in-house by SORGO.

02

Uniform throughout the trolley

Air distribution is designed for comparable results at the top, bottom, centre, left and right of the trolley.

03

Targeted maintenance

Individual fans can be serviced separately and replaced when required.

SINGLE-TROLLEY VERSION · SORGO SCS X1

Compact dimensions. Full smoking and cooking performance.

The single-trolley hot-smoking chamber combines professional process technology with a small footprint. Closed and open views show the high-quality stainless steel construction, precise airflow and hygienic interior.

CONSTRUCTION & CONFIGURATION

Hot-smoking technology for daily production

The original SORGO system image shows the compact combination of process chamber, controls and smoke generation. All components are hygienically and robustly combined in one service-friendly unit.

Original SORGO system image · Construction points 01–08
  1. 01
    Stainless steel housing

The system housing and chamber floor are made entirely of high-quality stainless steel.

  2. 02
    Fully insulated door

90 mm thick, one-piece construction with an acid- and temperature-resistant silicone seal.

  3. 03
    Robust rising door hinges

For high load-bearing capacity; automatic engagement occurs when the door opens to approximately 100°.

  4. 04
    Modern touch controls

Central operation, programme management and monitoring of process parameters.

  5. 05
    Integrated smoke generator

Compact, service-friendly installation in the side-mounted system section.

  6. 06
Floor drain as standard · Optional pneumatic actuation

A floor drain is provided as standard. It can optionally be pneumatically actuated and fitted with a water level sensor. This enables controlled drainage; the door remains closed during showering.

  7. 07
    Reinforced chamber floor

Reinforced underneath with solid U-sections for high mechanical stability. The extra-thick, smooth internal floor is designed for easy, hygienic cleaning.

  8. 08
    Double welded and durably insulated

The system is double welded inside and outside, making it completely sealed. Dimensionally stable stone wool insulation minimises heat losses, does not collapse and remains durable for decades.

CIP CLEANING

Fully automatic cleaning for hot-smoking systems

Automatic CIP cleaning is standard equipment on SORGO hot-smoking systems. The programme-controlled system independently performs cleaning, contact time and fresh-water rinsing. It covers the system, including all smoke pipework and the smoke generator. The number and distribution of cleaning units are defined during system planning.

  1. 01Central cleaning station

One central station supplies several connected systems and cleans them automatically in sequence.

  2. 02Adjustable dosing

Cleaning agent dosing can be adjusted from 1 to 10%.

  3. 03Pressure boosting

A powerful stainless steel pump provides a cleaning pressure of approximately 10 bar. This makes the system independent of the customer's mains water pressure.

  4. 04Distributed cleaning circuits

The cleaning circuits reach all relevant system areas, including all smoke pipework and the smoke generator.

  5. 05Automatic fresh-water rinsing

After cleaning and contact time, the system automatically rinses with clean water.

  6. 06Hygienic pipework

All external distribution from the cleaning station uses stainless steel Mapress pipe. All cleaning system valves are also stainless steel.

HEATING

The right heating system for your operation.

HP STEAM HEATING

HP steam coil manufactured in-house.

The SORGO-manufactured HP steam coil in 1.4301 stainless steel transfers heat from the heating steam to the circulating process air. The spiral-finned tubes provide a particularly large heat transfer surface. This gives the coil significantly higher efficiency than a design using smooth tubes.

ELECTRIC HEATING

The electric heating coil is made entirely of high-quality 1.4876 chromium-nickel steel and is installed in the upper section of the system. It transfers electrically generated heat to the circulating process air.

GAS AND OIL HEATING

Heat exchanger manufactured in-house.

The tubular heat exchanger is manufactured by SORGO from heat-resistant, thick-walled 1.4876 stainless steel and installed in the upper section of the system. Depending on the configuration, heating is provided by a high-performance gas burner or an oil burner.

Heat is transferred through the tube surfaces to the circulating process air. The design aims for high efficiency and low flue gas temperatures. Heating can thus be matched to the gas or oil supply available at the facility.

INSTALLATION & SYSTEM FLOOR

Three floor designs.

Matched to installation, loading and hygiene requirements.

01Installation on standard floorSimplest building preparation

The chamber is installed on a finished production floor with sufficient load-bearing capacity. An entry lip is used or a suitable entry plate manufactured to ensure a safe transition.

Simplest building preparation
02Recessed and flush with floor levelEasy entry for heavy trolleys

The system is recessed into an opening in the production floor and precisely levelled using four adjustment screws. The full area beneath the system floor is then filled with fluid concrete. The upper surface of the system floor is flush with the production floor, allowing loading trolleys to be pushed in easily.

Easy entry for heavy trolleys
03Hygienic floor with underfloor cleaningMaximum hygiene and cleanability

A robust system floor with a sealed welded underside stands on adjustable feet in a hygienic tray. Two upward-facing cleaning nozzles specifically rinse the area beneath the system floor.

Maximum hygiene and cleanability

All three floor variants can optionally be reinforced for heavy loads of up to 3 tonnes per trolley position.
