THAWING · WARMING · CHILLED STORAGE · VENTING
SORGO thawing rooms reproducibly prepare frozen meat and block-frozen products for the desired next step. Temperature, relative humidity and air movement are controlled together; the room, climate conditioning unit and air ducts are designed to suit product quantity and the building.

Conical nozzles and programme-controlled reversing dampers distribute air and temperature effectively throughout the entire room.
Vertical, horizontal or combined airflow enables nine programmable distribution states.
Room climate, core and surface temperatures are measured; limits and system states are monitored.
The SORGO SCS X1 controls programmes, setpoints and actual values, air capacity and process endpoints. SORGO INSPECT can centrally document temperature and humidity histories and batches.
REFERENCE · SPECIAL TURBO DRYING
The special turbo drying chamber shown has a double-row configuration. Depending on capacity and room layout, SORGO also designs single-row systems. A conventional swing door or space-saving SORGO jet door is available.

SORGO DOOR SYSTEMS
The jet door opens vertically, keeping the area in front of the system clear. After closing, pneumatic two-way cylinders press the fully insulated solid door firmly against the door jamb. An additional cylinder presses the door down against the floor. A continuous silicone seal resistant to grease, acids and temperature provides a permanently completely smoke-tight barrier when closed. The door system is also available for panel-built systems.
No door leaf swings into the production area – ideal for narrow traffic and loading routes.
After lowering, pneumatic cylinders press the 90 mm solid door firmly against the door jamb. An additional cylinder presses the door down against the floor. This creates a completely smoke-tight seal.
The door sequence can be fully automated. Without electricity or compressed air, access remains safely open.
Can be designed for various SORGO systems and panel-built systems, such as cold-smoking systems.
Distinction from airlock doors: continuous systems use airlock lifting doors as a separate, project-specific door system to safely separate process zones, synchronised with trolley transport.
REFERENCE SYSTEM · JET DOORS
SMOKE-TIGHT SWING DOOR · PANEL INSTALLATION
The smoke-tight swing door has the same design as the door systems of SORGO compact and smoking/cooking systems. It is supplied with a stainless steel frame and is suitable for installation in panel walls or masonry – for example, panel-built cold-smoking rooms.



Frame, door leaf and connection details are adapted to the wall construction, floor and desired opening direction. SORGO manufactures special dimensions to suit each room.
SORGO TROLLEYFLOW · DRIVERLESS TROLLEY TRANSFER SYSTEM
SORGO TrolleyFlow is an automated guided vehicle system (AGV) for loading trolleys and racks between staging, processing equipment, chilling and downstream areas. Travel routes, transfer points, jet doors and process authorisations are coordinated as one seamless, synchronised workflow to suit the layout, trolley concept and production.



Depending on layout, with inertial guidance using a gyroscope, odometry and floor magnets, or natural navigation based on dynamic environment sensing.
The low-profile vehicle picks up the loading trolley, travels to defined transfer points and performs the transport task without a driver.
Vehicle position, door release, transfer and system status are safely linked in the correct sequence.
Destinations, transport tasks and transfers are managed as a coordinated workflow and linked to the relevant process sequence.
SORGO COOKING KETTLES · ELECTRIC · STEAM · GAS · OIL
SORGO cooking kettles are designed to suit the product, batch size and available energy supply. Electric, steam, gas and oil versions are available – with durable stainless steel construction, safe operation and easily accessible surfaces for daily cleaning.

Indirect thermal-oil heating for uniform heat distribution and gentle cooking. Five sizes from 9 to 36 kW; no flue is required.
Available as a steam cooking kettle on request – for example, K400D with 425 litres of usable capacity, 24 kW and a steam supply at 3–4 bar. External dimensions 125 × 120 × 92 cm, internal dimensions 105 × 90 × 45 cm; steam valves and steam traps are included.
Indirectly heated version with stainless steel burner and automatic ignition. Five sizes from 18.6 to 74.4 kW for natural gas, propane or butane; flue gas routing and connections are planned for each project.
Available on request with the same robust kettle construction as the gas version, but with oil firing. Burner and connections are designed for each project.
Sturdy, seamlessly welded chromium-nickel steel construction with rounded internal corners, all-round insulation and an insulated lid with silicone seal.
A lockable 1¼-inch safety outlet and specially shaped internal base support complete emptying and easy cleaning.
Depending on configuration, the water inlet is integrated into the top plate or provided via front-mounted cold and hot water fittings.
Cooking time and temperature, freely selectable programme start and audible signal at programme end – the steam version, for example, has a separate MKA 120, control from 0 to 150 °C and a 7 m connection cable.

SORGO COOLING TANKS
Manufactured entirely from stainless steel 1.4301, the cooling tanks are seamlessly welded and mounted on eight height-adjustable feet. Cold and hot water can be supplied from the front; the shaped internal base and lockable 1¼-inch safety outlet facilitate complete emptying and cleaning.

Cooling shower cabins and cleanroom/slicing-room technology are planned in size, configuration and equipment to suit the product, process, trolley concept, production flow and building.
SORGO PRODUCT CHILLING · INDIVIDUALLY DESIGNED
SORGO cooling shower cabins are planned without a fixed size grid. Width, depth, height, row count and trolley positions depend on trolley dimensions, installation conditions and the desired process. Single-, double-, triple- or multi-row systems are possible, from a single trolley to multi-position cooling lines.



Rotating showers, side-wall showers or combined arrangements are designed to suit product loading and desired wetting.
Core temperature probes enable automatic subsequent steps, shutdown when the target temperature is reached and a signal at programme end.
Side walls, impact protection, floor plates and trolley positioning are configured to suit the loading arrangement.
In addition to product chilling, the system can be designed, for example, for defined spraying of salami with mould-ripening cultures.
With one or more doors depending on production flow, including pass-through or tunnel solutions.
The number and arrangement of trolley positions are adapted to capacity, available space and the loading workflow.
In multi-trolley cooling shower cabins, each trolley position can be controlled and showered separately. Each position has its own cold water valve; hot water operation additionally requires a separate hot water valve.
Microfine water mist increases the evaporation surface area and supports effective cooling with low water demand.
Additional side nozzles enable spraying tailored to the product and load.
CLEANROOM TECHNOLOGY · ISO 14644-1
For sensitive slicing and packaging areas, SORGO plans the interaction of room, air conditioning, filtration and automation. This creates a reproducible process climate that protects the product zone and supports consistent quality and shelf life.


Continuously monitored positive pressure and minimised openings reduce ingress from adjacent areas.
Climate conditioning unit, supply and exhaust air ducts and flush ceiling elements are made from chromium-nickel steel for easy cleaning.
Supplied air continuously passes through the filter stages; air capacity and fresh air proportion are regulated to suit the target climate.
A UVC stage designed for low temperatures can complement the multi-stage air conditioning.
The system maintains project-specific setpoints, continuously varies recirculating air and continuously supplies filtered air. Pressure conditions and process climate remain monitored.
A separate operating mode tailored to the facility directs exhaust air outdoors during cleaning and then switches to drying.
