SORGO roasting/baking systems combine high process temperatures with reversing horizontal cross-flow. For meatloaf, crusted ham and other products, they deliver uniform colour, cooking and crust formation over the entire trolley height.

Roasting/baking systems for high temperatures and uniform product colour.

The SORGO roasting/baking/cooking system combines a highly insulated stainless steel chamber with reversing horizontal cross-flow. It is suitable for meatloaf, crusted ham and products requiring uniform roasting, cooking or baking over the entire trolley height.

REVERSING CROSS-FLOW

Discharge from the left, flow horizontally through the product, extract on the right – then reverse automatically.

Reversing cross-flow is adapted to the product, trolley loading and system geometry. Pneumatically operated reversing dampers change the airflow direction under programme control. A dedicated recirculation fan per trolley position supports uniform treatment across all product levels.

TARGETED AIRFLOW

Tailored to the product and load.

Three air supply configurations are available for different products and loads. The appropriate solution is designed for the trolley and process.

    Air supply from left, right and centre. Slot height, number and settings follow the rack levels and trolley loading.

    Perforated-sheet airflow

    Specially shaped perforations direct conditioned air into the treatment chamber.

    Specially shaped nozzles direct conditioned air precisely into the treatment chamber.

LOADING DOOR

Designed for high process temperatures.

The solid loading door has a continuous silicone seal. It resists grease, acids and high temperatures and supports reliable sealing during cooking and baking.

Base steam heating at 30 kW per trolley reaches a maximum of 110 °C. Supplementary electric heating is required from 150 °C.

The reference data describe a two-trolley configuration. Trolley count, temperature, heating type, airflow and dimensions are designed for each project; additional heating capacities can be selected in the technical design section.

OPTIONAL CIP CLEANING

The CIP cleaning system is available as an option. One cleaning station can clean several connected systems sequentially. External CIP pipes are not insulated.

Cleaning scope, dosing and sequences are adapted to the components actually installed and the operational cleaning procedure.

INSTALLATION & SYSTEM FLOOR

Three floor configurations – matched to installation and hygiene requirements.

The system floor is designed to suit trolley weight, loading method, building floor and hygiene concept. Our exceptionally robust floor construction withstands the heaviest loads; wheel ruts in the system floor are a thing of the past. All three floor variants can optionally be reinforced for heavy loads. This version is specifically intended for loading by pallet truck or forklift and can be designed for loads of up to 3 tonnes per trolley position.

Installation on standard floor

The chamber is installed on a finished production floor with sufficient load-bearing capacity. An entry lip is used or a suitable entry plate manufactured to ensure a safe transition.

Recessed and flush with floor level

The system is recessed into an opening in the production floor and precisely levelled using four adjustment screws. The full area beneath the system floor is then filled with fluid concrete. The upper surface of the system floor is flush with the production floor, allowing loading trolleys to be pushed in easily.

Hygienic floor with underfloor cleaning

A robust system floor with a sealed welded underside stands on adjustable feet in a hygienic tray. Two upward-facing cleaning nozzles specifically rinse the area beneath the system floor.

Planungshinweis

BK3000 und größere Baugrößen übernehmen Wagenmaße und Gehäuse-Richtmaße aus der vorhandenen Auslegung. Zusätzlich zum Anlagengehäuse sind 300 mm für den Umluftmotor vorgesehen. Die Temperatur- und Leistungswerte sind Planungsrichtwerte; Wärmebedarf, Aufheizzeit und Medienanschlüsse werden für Produkt, Beschickung und Einbausituation projektspezifisch bestätigt.
