CLEAR PROCESS AREAS

Pre-ripening, ripening and cold smoking are distinct tasks – clearly separated technically.

SORGO designs every process stage according to product, loading, room size and desired drying curve. Rooms can form part of a complete ripening line or operate independently.

SYSTEM ARCHITECTURE

Flexible mixing unit installation

In SORGO climate, ripening, post-ripening and cold-smoking systems, the mixing unit is generally installed inside the treatment room. Depending on the room concept, it can also be positioned outside. Suction, pressure, fresh air and exhaust air ducts are routed to suit each system.

COOLING & HEATING COILS · IN-HOUSE MANUFACTURING

The core thermal component comes directly from SORGO.

SORGO manufactures its own heating and cooling coils as finned stainless steel tube coils. The fins increase effective surface area and enable high heating and cooling capacities in a confined space – with direct technical coordination and short, predictable delivery times.

The original SORGO climate concept combines air conditioning, return airflow and alternating distribution. This provides targeted control of temperature, humidity and air movement throughout the treatment room.

INTEGRATED HYGIENE

Automatic CIP system cleaning

Integrated CIP cleaning covers the climate conditioning unit, air ducts, smoke pipework and smoke generator. Relevant system areas are automatically cleaned and then rinsed.

    Cleaning, contact and rinsing steps are programmed via the system controls and performed automatically.

  2. 02Defined pressure and dosing

    Hot and cold water connections, adjustable cleaning agent dosing from 1 to 10%, and pressure boosting to approximately 10 bar.

  3. 03Automatic fresh-water rinsing

    After cleaning, the system automatically rinses pipes and cleaning areas with clean water.

  4. 04Individually controlled circuits

    The climate conditioning unit, air ducts and smoke pipework can be selectively controlled through separate cleaning circuits.

  5. 05Comprehensive cleaning coverage

    Strategically positioned cleaning nozzles reach the relevant internal areas; pipes and nozzles are stainless steel.

TECHNICAL DESIGN

Capacity

From compact ripening rooms to systems for approximately 250 t of product and room heights up to 6 m.

Reversing alternating airflow with shaped nozzles for uniform drying and ripening.

Enthalpy control proportionally uses suitable outside air and reduces unnecessary cooling and heating demand.

Heating

Heating and humidification are designed separately for each project. A steam coil for heating the process air does not imply a cooking function; humidification steam is a separate matter.

Cooling

Water shower and mist, glycol circuit, Freon or ammonia. Compact stainless steel finned-tube coils increase the effective surface area and provide high cooling capacity in a confined space; capacity and evaporation temperature are calculated for the product load and desired cooling time.

Smoke & process

Cold and hot smoking are designed to suit the product and desired smoke character. Smoke generator, air volume and cleaning scope are selected according to product, aroma and output.

Utilities & interfaces

Fresh and exhaust air, water, condensate, compressed air, electrical connected load and data connectivity are defined as a complete interface package. SORGO X1 and SORGO Inspect enable recipe management, trends and documentation.
