Dry-aging systems

Technical design

Heating, cooling, airflow and utility connections at a glance – a starting point for planning your system.

TECHNICAL DESIGN

Utilities, capacities and sizes – clearly comparable.

The following values represent proven SORGO standard configurations and selected project versions. They provide a sound planning basis; the final design always follows the product, process and local utility supply.

●

Aging time

Typical process: 3–6 weeks at precisely controlled temperature and humidity.

●

Material

Hygienic stainless steel 1.4301 construction with precise sensors and touch operation.

●

Option

Saline microclimate, process documentation and individually designed room capacity.

01

Heating

Heating and humidification are designed separately for each project. A steam coil for heating the process air does not imply a cooking function; humidification steam is a separate matter.

02

Cooling

Water shower and mist, glycol circuit, Freon or ammonia. Compact stainless steel finned-tube coils increase the effective surface area and provide high cooling capacity in a confined space; capacity and evaporation temperature are calculated for the product load and desired cooling time.

03

Smoke & process

Cold and hot smoking are designed to suit the product and desired smoke character. Smoke generator, air volume and cleaning scope are selected according to product, aroma and output.

04

Utilities & interfaces

Fresh and exhaust air, water, condensate, compressed air, electrical connected load and data connectivity are defined as a complete interface package. SORGO X1 and SORGO Inspect enable recipe management, trends and documentation.

Project planning note

All specifications are planning guidelines, not a guarantee of properties. Configuration and consumption depend on factors including product temperature, loading, smoke system, cooling package, local regulations and permitted refrigerants. Larger and double-row systems are available on request.
